These walnut pie treats are extremely simply little walnut pies that really utilize a pie hull for the treat base and they are loaded up with a walnut pie filling.
Having said that, they are quite simple to make, you basically reveal the pie outside layer, cut a few circles out, crease up the edges, fill them and heat them until they are gently brilliant dark colored and firm! I need to state that these walnut pie treats are much the same as little walnut pies that you can eat with your hands!
I will make a great deal of them during the current years treat platter since they will vanish rapidly!
- 1/2 cup pecans, chopped
- 2 tablespoons butter, melted
- 1/3 cup brown sugar
- 1/4 cup corn syrup
- 2 eggs
- 1/4 teaspoon salt
- 1 pie crust
- Heat the pecans, butter, brown sugar, corn syrup, eggs and salt in a sauce pan until it thickens, abut 5 minutes.
- Roll the pie crust out, cut out 2-3 inch circles (re-rolling the leftover dough as needed), fold up the edges about 1/4 inch and fill with the thickened filling mixture.
- Place the cookies on a parchment lined baking pan and bake in a preheated 400F/200C oven until the filling has just set, about 8-10 minutes before transferring to a wire rack to cool.
