A paleo enthusiast, Whole30, or vegetarian’s dream! These Whole30 meatless buffalo burgers ar straightforward to to form with simply some of vi straightforward ingredients.
- 4 cups riced cauliflower (roughly 1/2 large head of cauliflower)
- 1/2 cup cooked, mashed sweet potato
- 2 eggs
- 3 tablespoons buffalo sauce (or more depending on your heat level)
- 1/2 cup finely diced yellow onion
- 1 cup + 2 tbsp almond flour
- 1/2 teaspoon salt (or more if desired)
- Preheat oven to 375
- Combine the uncooked, riced cauliflower with the mashed sweet potato, eggs, buffalo sauce, yellow onion, almond flour, and salt. Mix well to incorporate the mashed sweet potato evenly
- Line a baking sheet with parchment paper and scoop out roughly 1/2 cup of the meatless burger mixture. Gently mold into a patty roughly 1-inch thick then place on the baking sheet – the mixture will be very wet, so handle with care. Patties can also be flattened after placing on the parchment paper
- Place baking sheet into the oven and bake for 35-40 minutes, until patties are cooked throughout and hold together
- Optional: For a slightly crispy top, keep the patties in the oven and turn the broiler on high. Broil for 4 minutes – watch the burgers so they don’t burn
