Keto No Bake Peanut Butter Cookies #dessertrecipe #chocolatecake #cheesecake #cookiessimplerecipe

These Keto No Bake Peanut Butter Cookies are only one net carb each and can be made with only 10 minutes of prep! This is a definitive simple low carb keto dessert!

These treats are a low carb, oat free form of the great no prepare nutty spread oats treats. Those treats are stacked with margarine, sugar, nutty spread and oats and sadly not in the slightest degree keto consistent. This rendition is as yet stuffed with a sweet nutty spread fudge enhance however none of the carbs!

The base for these Keto No Bake Peanut Butter Cookies is coconut oil, nutty spread, keto well disposed sugar, and cinnamon. It makes a smooth and sweet nutty spread flavor that melts in your mouth. Rather than oats the filling is a blend of unsweetened coconut chips and hemp seeds. I figure you will be amazed how well the coconut chips and hemp seeds substitute for oats. Neither one of the ones has a solid flavor, yet they keep their surface or "nibble" well so they function admirably as a low carb oat substitute.

Each Keto No Bake Peanut Butter Cookie is only one net carb! For this formula I utilize a smaller than normal silicone biscuit container to keep these treats uniform. I incline toward the smaller than expected biscuit size since it is the perfect size to fulfill my sweet tooth and keeps the carbs at any rate. In the smaller than usual biscuit container this makes 48 little treats and they come in at 1 net carb each. I store them in the cooler and 48 treats requires a significant stretch of time to eat so these are ideal for keto feast prep!

Ingredients

  • 3/4 cup coconut oil
  • 3/4 cup creamy low carb peanut butter or almond butter
  • 1 cup swerve sweetener (brown sugar or granular)
  • 1/2 teaspoon cinnamon
  • 1 1/2 cup UNSWEETENED coconut flakes
  • 2 tablespoons hulled hemp seeds, also called hemp hearts (you can use an extra 2 tablespoons of coconut flakes if you don't have this. I like the mixed texture and it adds a bit of fiber)
  • sea salt for topping (optional)

Instructions

  1. In a medium size sauce pan combine the coconut oil and the peanut butter over medium low heat.
  2. As the mixture begins to melt stir until well combined.
  3. Stir in the sweetener and cinnamon.
  4. Increase heat to medium or just over medium and slowly bring the mixture to a simmer.
  5. When the mixture is simmering and the sweetener has completely melted (your fudge mixture should be smooth with no visible granulars) remove from heat and stir in the coconut flakes and the hemp seeds.
  6. Set aside and allow mixture to cool slightly.
  7. Carefully spoon into silicone mini muffin tins until 3/4 full.
  8. Sprinkle with sea salt if desired.
  9. Freeze for 15 minutes until set. Remove from tins and store in an air tight container in the freezer.
